Sunrise to Sunset Culinary Experiences at Omni La Costa Resort & Spa

The Omni La Costa Resort & Spa is an ideal destination for a romantic getaway, wedding venue, family reunion, and birthday celebration.

Recently the resort transformed the 9th hole for one night to showcase how an event on the iconic golf course is spectacular at sunset. The staff decorated a long table set for 50 guests overlooking the greens, lakes and La Costa hills.

Basket lights were hung to create an ethereal glow with lit candles to provide just enough light for Executive Chef Emily Brubaker’s special dinner menu. “I wanted to create dishes that are the same colors as a sunrise and sunset,” said Brubaker.

Tables were set with sunrise orange napkins and sun kissed orange wine glasses. Placemats looked like floral petals stretching outward to fresh greenery dazzling the center of the table. Other centerpiece items were cut and whole citrus providing pleasing aromatherapy and pop of yellow and orange colors. Low votive glasses held flickering candles to set the mood.

Everyone received a personalized menu starting with an amuse-bouche of a raw shucked oyster bathed in a gin and cucumber mignonette. The colors were of the early morning just before the sun rises from the sky to warm the day. As with a sunrise, this first item on the menu was extraordinary.

Next arrived a chilled corn soup that was as pretty as the first rays of sunlight to light up a room. The colors of fresh crab meat, cucumber and jalapeño on the bottom of the bowl represented the colors of fresh dew in the early morning. When a cold, silky and creamy corn broth was poured from a carafe on top bathing the bowl in pale yellow.

When the colorful rosy hue heirloom tomato salad arrived, the yellow, red and orange represented the sun rising in the sky. Feta cheese looked like clouds, red onion represented streaks in the sky and opal basil gave a nod to the greenery of the La Costa Golf Course.

The wines poured during this dinner were from Decoy Wines. There was a bright and floral California Sauvignon Blanc and a brilliant red wine.

The colors of midday sun was represented in the pure comfort Cavatelli pasta. This dish was enhanced with pesto dojo, sweet peppers and ricotta salata.

Late afternoon peach colors filled an entrée plate with a perfectly cooked wild salmon filet. It dazzled with roasted potato, bright yellow beets and delicious chermoula to excite all of our senses.

Deeper colors of the sun setting were represented in the filet of beef with a creamy potato puree, bright roasted carrots, and an ethereal bordelaise sauce. This plate offered a smooth fusion of deep sky burst red and yellow that cools into the calmness of an evening.

We finished the meal with a work of art by Omni La Costa Resort & Spa’s pastry chef. Named Twilight Enchantment, it represented the magical time after a sunset and before a sunrise. Made with blackberry basil mousse and a calamansi lime curd it looked just like the sun going down into a dark purple sky. This star shaped gelatin-like ruby color covered a poppy seed sponge on a solid and slightly chewy raspberry cereal crunch. The crust had a nostalgic Pop-Rock candy burst with each bite. The mixology team paired this sweet treat with an Espresso Martini shot.
