This flavorful hors d’oeuvre is easy to make and packs in everyone’s favorite tastes to accompany a cocktail: smokey, spicy, sweet and salty. Chorizo Dates can be prepped and frozen and then baked to order.
- 24 jumbo Medjool pitted dates
- 7-8 oz Chorizo Sausage (Hard style, not crumbly such as Columbus, Goya or similar, avoid the extra spicy type)
- 12 slices bacon (not thick cut)
Cut the chorizo into 1.5” long batons as thick as possible to stuff the date without breaking the hole. Wrap each date one and a half times widthwise. Seal with toothpick. Place on a rack over a drip pan. Bake at 350 degrees for 20 minutes until fat is rendered properly.
