Go Beyond the Bean This Cinco de Mayo

The Better Bean Company loves their beans. Their mission to inspire people to eat more beans. Their mantra is, “For the Love of Beans”.  With Cinco de Mayo just around the corner, between the margarita’s and tortilla chips, the bean will be taking center stage. Particularly the refried and black bean type.  As the folks at The Better Bean Company will tell you, there are many varieties of beans. It’s not all just black and refried.

This family owned business was founded by Keith Kullberg after he developed a recipe for refried red beans, while attending Oregon State. It struck Keith while he was hiking, back in 2009., “Everyone loves my beans.”  The prepared and ready to serve product is offered in eight different varieties including:

Fresh Mex – Skillet Refried Red Beans, Southwestern Pinto Beans, Uncanny Refried Black Beans and Roasted Chipotle Beans.

Global Classics – Cuban Black Beans, Tuscan White Beans, Better Baked Beans and Three Sisters Chili.

Keith’s daughter Hannah Kullberg, is an integral part of the bean team and is known as the “Bean Queen”. Hannah helped usher the company through non-GMO verification and advocated on the local food policy council.
In the spirit of this Cinco de Mayo holiday, we’re sharing a few of the recipes that go beyond the taco and nachos fare. We’ve included along with the recipes a classic margarita cocktail, provided by Tequila Partida. Be sure to check out the Black Bean Brownies!

Black Bean Stuffed Avacados

These avocados are easy to make and stuffed full of nutrition! Eat for breakfast, dinner or whatever! Our Uncanny Refried Black beans make this recipe a breeze – no need to wait for those beans to prepare because they’re ready-to-eat. Enjoy!

Ingredients:

  • 4 or 5 avocado halves
  • 1/2 cup cooked quinoa
  • 1 tub of Better Beans Uncanny Refried Black Beans
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper

Add the beans, onion, bell pepper, and quinoa to a large pot. Cook on medium-high heat for about eight minutes. Brush the avocado halves with olive oil and grill for about eight minutes. Spoon the bean mixture into the avocados and top with cilantro.
