Hilton San Diego Gaslamp Quarter Hotel’s Dazzling Transformation

On June 29, 2023, Hilton San Diego Gaslamp Quarter in Southern California completed a $22.5M million-dollar renovation project, leaving the space feeling fresh, pristine, and renewed. Spearheaded by Dallas-based waldrop+nichols studio, the Hilton Gaslamp’s facelift features a whimsical California casual look throughout the hotel. The 286 guest rooms, lofts, and suites highlight refreshing pops of color and gorgeous interior design upgrades.

The hotel lobby has an abundance of chairs, couches, and seating including charging areas, so you can bring your laptop or phone to get some work done. They have a refillable water station in the lobby by the restroom if you bring a water bottle. No need to hire a pet sitter for your trip away from home. Bring your dog because the pet-friendly hotel even offers a dog menu for your pup.

Wild Hare Bar Garden

Get a taste of California cuisine at the on-site restaurant Wild Hare Bar Garden, where the meat and produce are locally sourced. Stop by for breakfast from 6:30 am to 11 am, lunch from 11 am to 2 pm, or dinner from 4 pm to 10 pm. They serve drinks until 11 pm Sunday through Thursday and until 12 am Friday and Saturday.

Thanks to Southern California’s divine temperatures, dine outside on the patio to enjoy the ambiance and great weather. There’s also plenty of space inside with tables and a bar area to hang out at.

The breakfast menu has options like omelets, avocado toast, pancakes, and steel-cut oats. The hearty Carne Asada Bowl made with grilled steak, scrambled eggs, Menonita cheese, roasted salsa, potatoes, and corn tortillas makes a filling and flavorful choice for breakfast. They serve La Colombe coffee, tea, juice, and other choices to fuel your morning.

Lunch and dinner menus include salads, large plates, small plates, cocktails, wine, and beer. For the fungi fans out there, order the Pappardelle made with heirloom tomatoes, roasted mushrooms, wilted garlic kale, and Manchego cheese. Each mouthful has the perfect mushroom essence and deliciously decadent. Pair it with the Lucky Foot signature cocktail. It has Cutwater Mezcal, carrot juice, lime juice, and jalapeño. The carrot juice adds a pop of color and flavor that you don’t find in a lot of cocktails.

The Wild Hare Bar Garden beverage menu has carefully crafted cocktails as well as a rotating list of local craft beers and selected wines. The cocktail names are all rabbit puns like I’m All Ears, Hop To It, and the What’s Up Doc? If you don’t want alcohol but still want a fun drink, most of the cocktails can be made alcohol-free.

Don’t leave without ordering the Local Carrot Cake for dessert. It’s wonderfully spiced and incredibly scrumptious. The plating is beautiful and the portion is generous. It’s a true stand-out! Eat it at the Wild Hare Bar Garden or take it up to your room.
