HOMEMADE PASTA FOR TWO

Ingredients for the pasta:

– 2 egg yolks

– 1 egg

– 1 teaspoon of olive oil

– 250g of semolina or wheat flour for pasta

– A pinch of salt

Instructions:

On a clean surface, pour the flour and make a well in the middle, like a volcano, and there deposit the beaten eggs with the olive oil and salt.

Start working from the inside out, incorporating the flour into the egg mixture. Wrap in plastic wrap and let it rest.

Roll out with a rolling pin or machine until it reaches a thickness of approximately 1mm and then cut into 7mm slices.

Cook in salted water. Remember that fresh pasta cooks faster than dried pasta.

Sauté the garlic with the olive oil until golden brown.

Add the halved tomatoes and then the cooked pasta with 1 spoon of the cooking water.

Season with salt and pepper and finish with basil.
