Proof, An American Canteen

Inside the resort, you can dine at Proof, An American Canteen. A charming, casual restaurant featuring inspirational home-style cuisine in an environment, Proof is perfect for drinks with friends or a low-key family dinner. The atmosphere is buzzing with energy every night, with television and games all around, an active bar and a railroad track running through the center of the restaurant.

The bar features whiskey and bourbon, highlighting spirits that are small-batch or craft-distilled. Classic, homestyle American food dominates the menu, offering Maine lobster rolls, ribs smoked in house, and chicken and waffles with various seasonal toppings and syrups available. They also offered a gorgeous, colorful salad filled with fresh vegetables and a delicious, classic grilled chicken sandwich.

Be sure to try the signature pretzel knots with beer cheese like I did, and don’t forget to stop by the old-fashioned soda fountain for dessert. There, you can snack on delicious nostalgic milkshakes, malts, or floats. You can even ask for a spiked version for an adult twist to a childhood classic! I went for a classic scoop of ice cream, topped with whipped cream and nuts.

The Spa

After you indulge in the delicious food at Proof, head on over to the spa for a relaxing, luxurious, desert-inspired spa treatment or two. The spa offers a variety of spa treatments, wellness services and relaxation experiences, including a steam room and sauna, a design your own aroma activity, and yoga for sports sessions. Many of the treatments feature local or seasonal ingredients, including prickly pear, jojoba, green tea, honey and even the state flower, the saguaro blossom.
