Thanksgiving Chocolates by Delysia Chocolatier!

Thanksgiving is my favorite holiday. It brings family and friends together with good food, wine and desserts. This year I will be hosting the annual feast and I am already planning the menu and looking for giftbag items for my guests. It is a fun way to kick-off the holiday season. One of the items I’ll be featuring in my goodie bags is a Thanksgiving-inspired collection of truffles designed by Delysia Chocolatier, Chef Nicole Patel. I was so impressed with the Delysia products (see products list below) I reached out to Chef Nicole Patel and asked her about some of her favorite Thanksgiving memories and chocolate recommendations. She was happy to oblige. 

Sherrie Wilkolaski: What is your favorite Thanksgiving holiday memory? 

Chef Nicole Patel: Thanksgiving has always been a time for family, a full table spread of food, and watching Macy’s Thanksgiving Day parade (it wouldn’t be Thanksgiving without it!). From a young age, I remember waking early to watch the parade, eagerly awaiting the arrival of St. Nick, while the sweet smell of pumpkin pies and cinnamon rolls wafted from the kitchen. My favorite thing to help with in the kitchen, besides the dessert (of course!), was the side dishes. That’s the best part of the Thanksgiving meal! This tradition is still alive and well with my boys, as they help me dress the turkey, crumble to cornbread for the stuffing, and top the sweet potato casserole with our homemade marshmallows (my youngest loves sneaking a spoonful of gooey marshmallow cream when I’m not looking). My favorite memory – then and now – is being together with the ones you love, bonding through food.  

SW: What is your favorite chocolate and wine pairing?

NP: Bubbles! Sparkling wine is absolutely made for pairing with chocolate. And the creamy mouthfeel of champagne is so luxurious it is a beautiful accompaniment to our gold chocolate turkeys. 

In general bold red wines are best enjoyed with darker chocolates – try our Wine collection chocolate truffles. For a unique experience, our Ruby collection chocolate truffles, which are naturally pink from ruby cacao beans, are perfect with a glass of rosé wine. Zinfandel often has a hint of sweetness and wonderful cinnamon and spice flavors that make it a delicious accompaniment to the German-inspired, aromatic chocolate truffles in our Nutcracker collection. 

SW: What inspires your recipes? 

NP: I believe that inspiration can be found anywhere. I love to find inspiration from different culinary traditions found in my family’s unique background. Our truffle collections are often inspired by my childhood memories of amazing meals and holiday treats, or by watching my two boys explore the world. Our goal is to tell these stories through unique chocolate truffle flavors like the Campfire spiced muffin truffle in our Winter Wonderland collection or the Chicken fried steak chocolate truffle in the Taste of the South collection. Each bite is a journey.

SW: How do you define luxury?
