ARIA Resort & Casino Culinary Extravaganza

Known as one of the best hotels along the Las Vegas Strip, ARIA Resort & Casino offers more than 16 different restaurants and 10 bars. The eclectic array of eateries include exciting world-class fine dining experiences, popular casual venues, and the new Proper Eats Food Hall.

Fine Dining

Peek inside the sophisticated gold and black entrance at Jean Georges Steakhouse to notice the unique glazed lava rock bar with what looks like milk dipping down at the bottom of the custom made chandelier. Besides featuring dozens of cuts of Prime beef, there are also seafood and other proteins cooked on a wood-burning grill using mesquite, pear and apricot wood. This fuel for the fire creates pleasing flavor profiles. Larger cuts of Wagyu Tomahawk Ribeye and Prime Porterhouse are carved table side.

Classic sides include a salt and pepper baked potato and sautéed broccoli rabe. Be sure to order Jean-Georges Vongerichten’s one-of-a-kind molten chocolate cake with a white chocolate shell sphere. Once the server scores the chocolate with warm chocolate sauce, its petals drop to become a spectacular edible lotus flower.

The Italain-American Carbone, is a favorite dining concept from Mario Carbone, Rich Torrisi and Jeff Zalaznick. With a touch of glamour, showmanship with tableside service and a rum cart, this New York-inspired fine dining restaurant showcases elevated classics such as Lobster Fra Diavolo, Chicken Scarpariello, Veal Parmesan and Octopus Pizzaiolo.

Carbone

Other fine dining venues include Michael Mina’s French Bardot Brasserie next to Jean Georges Steakhouse and across from Carbone. It’s a favorite during brunch, happy hour and dinner serving Old World French cuisine and cocktails with a New World twist.

Fun Dining

From Taipei to Los Angeles, Din Tai Fung is an esteemed Taiwanese dumpling and noodle house known for its Shanghai-style soup dumplings filled with savory Kurobuta pork and fluffy Xiao Long Bao buns.

Other favorites include cucumber salad, handcrafted green vegan dumplings, and red bean with mochi Xiao Long Bay for dessert.

Recently on the promenade level of the resort, ARIA collaborated with Clique Hospitality to curate a group of popular fast-casual culinary venues to form Proper Eats Food Hall.  They welcomed popular eateries from London, Los Angeles, New York and Portland to open another location in Las Vegas. “We’ve curated a stellar lineup to wow foodies from around the globe. It’s the best of the best, plus exceptional cocktails to complement the cuisine,” said Andy Masi, founder of Clique Hospitality. “We are thrilled to debut Proper Eats Food Hall as part of ARIA’s incredible dining and nightlife offerings.”

Proper Eats

The colorful 24,000 square feet culinary space reflects each eateries unique personality. Proper Eats is led by chef and partner Jason McLeod. One of the fast casual spots, Easy Donuts is a front for Easy Cocktail Lounge. If you look behind the letters E A S Y on their sign, you will see the words S P E A K, between each letter. The space behind the ordering counter is actually a secret cabaret style Speakeasy.

Mixologist Eric Hobbie creates ‘show stopping’ cocktails named the ‘Smoke Show’ and ‘Heart of the Ocean’. Beluga caviar service is available and live music adds to the ambiance.

Egghead

Egghead: Tao Hospitality’s Egghead from New York City opened to provide their delicious egg-centric sandwiches to Las Vegas. Served on freshly baked potato brioche bread, its a modern spin on the classic breakfast.

Wexler's Deli

Wexler’s Deli: This old-school Jewish Deli originates in Los Angeles at Grand Central Market. It’s famous for its handcrafted pastrami and smoked salmon, array of bagels and custom sandwiches. Menu offerings include the “Sam Rothstein,” a grilled pastrami Reuben made with Swiss cheese, Russian dressing and sauerkraut on rye bread; and the “Moe Greene,” a toasted bagel topped with lox, paddlefish caviar and gold leaf.

Temaki Bar

Temaki: A new sushi concept inspired by the tradition of freshly prepared handrolls made with warm rice and chilled fish. Temaki is new to Clique’s Southern California portfolio, a favorite sushi spot in Encinitas, California.

Laughing Buddha

Laughing Buddha: Known for its steamy ramen noodles and fragrant broths creating a texture that is rich and silky with deep umami flavor. Laughing Buddha also serves tonkotsu and miso ramen as well as pork belly and crispy eggplant bao buns.

Lola Burgers

Lola’s Burgers: Michael Wharton’s gourmet burgers were a New York favorite in the 1970s and 1980s. Lola Wharton honors her grandfather by serving his family recipes of crave-worthy burgers made with premium beef. They are served on freshly baked buns. Menu highlights include the “Smash Burger,” a double patty with American cheese, grilled onions, pickles and Russian dressing; and the “Backyard Classic,” made with a 6 oz patty, American cheese, diced onions, lettuce, tomato, pickles and mustard. She also makes a plant-based vegan “Impossible” burger topped with American cheese, shredded lettuce, tomato, vegan burger sauce and avocado spread.

Pizzaoki

Pizzaoki: GRAMMY-nominated artist, producer and DJ Steve Aoki created Pizzaoki, a delicious take on New York-style pizzas. Pizza lovers can try a classic or vegan and cauliflower crust options. Pizzaoki is available by the slice or 18” pies, with menu options that include the “Pursuit of Happiness” topped with mozzarella, marinara sauce and basil; and the “Hiroquest,” topped with mozzarella, parmesan, pepperoni, sausage, capicola and tomato sauce; among other signatures.

Proper Bar: Proper Bar’s cocktails were crafted by renowned mixologist Eric Hobbie to complement the eclectic cuisine at Proper Eats. They include signature drinks to honor each concept, including the Good Seoul, made with Casamigos Tequila, Watermelon Red Bull, Aperol, Orgeat and Lemon; the Tropic Thunder, made with Mt. Gay rum, Orgeat, Fever Tree Cola and lime; and Kosher Style, made with Skyy vodka, raspberry syrup, iced tea and Fever Tree Yuzu lime soda. There also are several classics on draft, including the cosmo, old fashioned, mojito, margarita, paloma and espresso martini.

Seoul Bird

Seoul Bird:  Food Network superstar Judy Joo and her partner Andrew Hales opened their first Seoul Bird outside of London. Inspired by Joo’s Korean American heritage and the duo’s food tours across South Korea, Seoul Bird is built on the foundations of Korean cooking, ingredients and flavors. The venue’s signature Seoul chicken sandwich is made with Seoul Bird’s famous crispy double fried chicken breast and topped with American cheese, fresh lettuce and red onion, then topped with house-made umami sauce and kewpie mayo.

Shalom Y’all: Mediterranean cuisine prepared with fresh, high-quality ingredients to make shawarma spiced cauliflower, grilled lamb and beef Nazareth kebabs. Shalom Y’all is the flagship restaurant for Portland’s Sesame Collective, which was founded in 2020 and already has a collection of six dining concepts, building on the lauded cuisine of Kasey Mills.
